This is a good time of year to harvest spruce gum deposits from wounds on spruce trees. The sap coagulates into blisters and you can scrap it off.
Ax loggers used to chew it to freshen their breath. It tastes a lot like you ran into a spruce tree with your mouth open.

Haven't chewed it since I was a kid. The indians used to add sweeteners to it.
